PORK TENDERLOIN
You may have heard of a famous fancy French dish known as 'filet mignon' – well, that's pork tenderloin.
It's a smallish prime, lean fillet of tender meat that comes from underneath the backbone of the pork loin.
Pork tenderloin may be left whole, cut crossways into elegant little rounds, or cubed and can be braised, roast, grilled, or pan-fried.
Classic dishes see it basted with Chinese barbecue sauces and roast, or pot-roast with apples, onions and cider.

Pork is known to be satisfyingly full of flavour, although tending to be one of the less leaner meats. Most cuts these days can be as lean as you would like them. Pork is a common ingredient in sausages using meat from the shoulder, hand, belly or leg as they do need some content of fat to give a moist and a flavour packed taste. Pork is known for crackling, this is from the rind and needs salt added to it, which is the reason for the crispy taste after the pork comes from the oven. Pigs are used for spit roasts which are becoming more popular for large parties and functions.
