Wild duck does not taste like farm-raised duck. But that doesn't mean it isn't good when properly prepared. The key to wild duck, as with any wild game, is not to over cook it and to eliminate as much of the natural fat as possible, (replacing it, if fat ratio needs to be adjusted, with domestic oil/fat products.) Woodcock on the otherhand is not as commonly used as other game birds, but tastes very similar to partridge, these are ideal for one per person.


pigeon and Guinea Fowl : The pigeon is the smallest of the game birds, but are nevertheless very tasty. They are in season all the year round, and are available from Calnan Bros as whole or breast fillets. Like most of our game birds out of season, they are normally frozen, where-as in season they can be fresh.
Guinea Fowl is tender and succulent as a roast or casserole. From Calnan Bros these can come whole or as supremes.

pheasant and partridge : Pheasant is a game bird, meaning that it is a wild bird which is hunted for food, but at certain times of the year is protected by law. The hunting season for pheasant in Engand starts on the 1st October and ends on the 1st Febuary, therefore pheasant is at its best during these times as it is available fresh from Calnan Bros.
Partridge is a small game bird weighing about 1 to 3 pounds (about 454 to 1,350g) with tender, delicate meat. Related to the pheasant, so tasting fairly similar, but not quite as strong. These can also be bought from us in season and occasionly frozen throughout other months.

Venison

Wild Venison with a distinctive flavour one would expect from animal's which have foraged in the natural environment. Venison is high in protein,low in fat and has fewer calories than other red meats. Venison is also particulary low in saturated fatty acids and contains higher iron levels than other red meats.
